Hey guys! Wanted to share my favorite weekend treat! Super easy to make! Quick and easy Vietnamese dessert that can last all weekend!
Ingredients:
1 cup Sweet/Glutenous Rice
4 cup Water
3/4 c Sugar
1 can Black Eyed Peas (drained and rinsed)
1 can coconut milk
In pot, boil the rice with water for about 20 minutes, or until the water is almost gone. You want to keep it a little runny. Add the black eyed peas and sugar. Stir well. In separate pot, bring coconut milk to a light boil. Just enough to heat through. Portion rice into bowls and add coconut milk on top. You can add shredded dried coconut, crushed peanuts, or additional sugar on top, if you wish. Enjoy!
