Baked Brie with Roasted Garlic and Pistachios
We roasted garlic and toasted pistachios and mixed with olive oil and pepper and crushed in a mortal and pestle to form a paste.
Our brie was from a wheel and we cut with a biscuit cutter to form our round shape. Although you can purchase brie in a small round, we always have brie wheels at our house, so this was easier for us.
We covered our Brie in Puff Pastry and placed it back into the biscuit cutter to keep the cheese form oozing out. After adding our garlic and pistachio mixture, we brushed with butter and placed in a 350 degree oven for 8 minutes, then increased the temperature to 400 to complete the puff pastry.
Our rosemary, chive and sea salt crackers are simple.
We rolled them out thin and placed in 450 oven for about 5 minutes on each side then turned the oven off and left the crackers to cool in the oven, this gave them a nice crispy texture.
