Vegan "fish" Ceviche!!

Recipe
1 Cauliflower (Made 4 cups)
1-1/2 tsp of Himalayan pink salt (Season to your taste)
1/2 Cup of diced red onion
3/4 Cup of diced white Onion
3 Cups of diced tomatoes
2 Cups of chopped cucumber
1/2 Cup of chopped fresh cilantro
2 Chopped serrano peppers (Optional)
3-4 tbsp of seaweed flakes (place seaweed in a blender or food processor and pulse until they become flakes)
2 Cups of freshly squeezed lime juice
(or enough to cover most of the cauliflower)
Fill a large pot with water + 1 tsp of salt, before it boils turn down the flame to a low and submerge the whole cauliflower into the hot water. If needed flip the cauliflower over half way so both sides of the cauliflower get submerged in the water. Do not over cook. Remove after 5 minutes, place in a large bowl and run under cold water to stop the cooking process.
Once cooled cut the cauliflower into pieces just like in the video. Place in a large bowl then add the lime juice and salt. Mix. Marinade in the refrigerator for at least 40 minutes.
After 2-1/2 hours add all of the chopped veggies along with the seaweed flakes.
Serve over tostadas with slices of avocado or in a bowl with slices of jicama or tortilla chips and lots of avocado. Enjoy ♥️
