🔶Recipe🔶
🔻Ingredients:
2 green plantains
1/2 cup ham ( small pieces)
1/4 cup bacon ( about 2 slices)
1 teaspoon butter
Salt
Pepper
➡️Instructions:
Peel the green plantains, then cut them in chunks.
In a pot, boil water with some salt, then cook the plantain chunks until tender( about 6 minutes) Do not overcook they should be easy to mash but not purée soft.
Meanwhile heat a pan, previously sprayed with cooking spray and cook the ham and bacon until crispy.
Transfer the plantain pieces to a bowl, do this while they are still hot. (Save the water) Mash the plantains using a wood masher - or just a regular masher – I happen to use a plastic lettuce cutter... it works just fine) until you obtain chunky dough-like consistency. Add about 2-3 tablespoons of the reserved water. Season with salt and pepper.
Mix the smashed plantains with the ham & bacon, add some butter if you feel the “dough” is too dry. Mold into balls ( that is why the term: BOLONES) then transfer to a cooking tray, use cooking spray on bottom and finish spraying all over the bolones.
Cook in 400 F oven for about 20 minutes, turning the balls half way. Enjoy!!
* Add fresh white cheese or mozzarella in small pieces to the “Bolones” I didn’t just because I don’t usually eat cheese, but it is delicious!
