There are some REALLY bad sorbet recipes out there (as there are ice cream recipes too) so I wanted to make sure my first sorbet make was REALLY good, quite possibly the best raspberry sorbet you'll make.
Raspberry sorbet should be almost creamy, smooth, packed with flavour and not like crushed ice cream or Granita. I spoke to my friend Chiara about how to achieve the best sorbet and she gave me great advice as always, and the result is PERFECT!
So if you want to make the best raspberry sorbet at home, here's what you'll need:
300g Water
500g Raspberries
220g Sugar
85g Dextrose
5g Pectin powder
Watch the video to see how to use the pectin properly, once the sorbet lightens in colour and stiffens up, it's ready to extract from your machine.
Such as strong beautiful raspberry flavour, amazing colour and the mouthfeel is incredible. It's almost ice cream!
