Mixed Vegetable Pulao is a spiced rice dish with the nutritional value of the various vegetables that have been used.
MIXED VEGETABLE PULAO (PLAIN PULAO)
Ingredients
¼ cup frozen green peas, blanched
1 medium carrot, peeled, cut into small cubes and blanched
¼ medium cauliflower, cut into small florets and blanched
6-7 French beans, chopped and blanched
3 cups cooked Basmati rice
2 tablespoons oil
2 bay leaves
2-3 cloves
2-3 black peppercorns
1 tablespoon ginger-garlic paste
Salt to taste
Method
1. Heat oil in a deep non-stick pan. Add bay leaves, cloves and black peppercorns and sauté till fragrant.
2. Add ginger-garlic paste, green peas, carrot, cauliflower florets and French beans, mix and cook for 1 minute.
3. Add salt and mix. Add cooked rice, mix, cover and cook for 5 minutes.
4. Serve hot.
