Trying Celebrity Chef Signature Dishes: Jean-Georges Vongerichten “Molten Chocolate Cake"

Ingredients
- 1/2 cup (4oz) unsalted butter
- 2 tbsp All-Purpose Flour
- 6oz bittersweet chocolate (70% dark)
- 2 eggs
- 2 egg yolks
- 1/4 cup sugar
- 1/4 tsp salt
Steps
- preheat oven to 450 F
- butter and lightly flour 6oz ramekins and tap out excess flour, set on baking sheet
- fill a small pot with a bit of water (1 inch deep) and bring to simmer
- place chocolate and butter in heat-proof mixing bowl and place the bowl over the heated water pot
- stir chocolate and butter until melted, then remove from heat and set aside
- combine eggs, yolks, sugar and salt in a mixing bowl and vigorously whisk until thickened and pale (2 mins)
- combine melted chocolate with egg mixture and add flour, mix just until no streaks remain. Don’t over mix!
- add batter to ramekins, leaving room at top
- bake until tops of cakes are set, but center still feels jiggly to touch (8-12 mins)
- remove from oven and let cool for 1-2 mins, carefully turn over and let stand for 30 seconds before lifting ramekin
