Aji de Gallina or Aji de Pollo is a delicious Peruvian Classic. Made with the famous Spicy Yellow Pepper (Aji Amarillo) and a decadent creamy Chicken Sauce.
Peruvian Peppers Paste can be found in Latin food markets and ethnic stores. You can also order them online.
I made a special trip to New Jersey USA to buy all my ingredients.
Ingredients:
- Chicken Broth (Make your own with chicken breast, celery, onion)
- Chicken Breast (After you make the broth, shred the chicken)
- 5 Slices of White Bread
- Evaporated Milk (3/4 cup to soak the bread)
- Evaporated Milk and Chicken broth for the cream
- 1 Onion (finely chopped)
- 2 or 3 cloves or garlic (minced)
- Cumin, Salt, Black Pepper
- Yellow Pepper Paste (Aji Amarillo)
- Aji Mirasol Pepper Paste
- Aji Panca Pepper Paste
- Parmesan Cheese (grated)
- Chopped Walnuts (Optional. I don't add walnuts in this recipe, but many people do)
Garnish:
Boiled Potatoes (yellow if possible), Hard Boiled Eggs and Olives
