On this "quick bites" we try the famous Pane ca Meusa, the famous spleen sandwich from Palermo. I have grown to love this sandwich, but this was the first time I tasted it at Nni Franco U Vastiddaru.

It consists of a soft roll or bread (pane) filled with thinly sliced and sautéed calf's spleen (meusa), along with a sprinkling of caciocavallo cheese and sometimes a squeeze of lemon juice or a dash of salt and pepper for seasoning.
The calf's spleen is typically cleaned, boiled, and then thinly sliced before being sautéed in lard or olive oil with onions, salt, and sometimes a splash of vinegar. This preparation gives the meat a tender texture and a rich, savory flavor.
