This Puerto Rican Pollo Guisado is so fresh, flavorful and savory. It's basically a Chicken Stew on flavor steroids. Feel free to put your own spin to this like adding corn on the cob! So delicious! For my Boricuas, please comment below on your family's special twist to this dish. Enjoy!
Ingredients
* 1/4 cup of olive oil
* 1/4 cup of sofrito
* 6 oz of tomato sauce
* 1 whole cut up chicken
* Marinade of your choice. I did mojo and sazon.
* 3-4 cups of chicken stock
* Pitted olives to taste
* 3 bay leaves
* 1 tablespoon salt
* 1 tablespoon of oregano
* 4 red potatoes cut in half
* 3/4 cup of baby carrots
* 3/4 cup of chopped celery
* Sliced mushrooms (optional and to taste)
Instructions
- Marinate your chicken at least 2 hours prior to cooking.
- Take your oil and spread on hot pan and place the chicken pieces skin side down to brown. After 5 minutes take a peek and see if it’s to your liking. If so, flip the pieces and add your sofrito and tomato sauce. Pour over the chicken stock and then place your olives, bay leaves, oregano and then salt. Take each piece of chicken and give it a little shake to help all the ingredients incorporate evenly together.
-Cover and cook on medium heat for about 20 minutes. Add mushrooms. You can also add corn on the cob! I just didn’t have any when I filmed. Cover again and cook for another 5 to 10 minutes.
