I've been looking for a good gluten free recipe for pizza dough for a very long time. This is the best recipe I've found.
Gluten free pizza recipe for 1-250g dough ball.

250g Fioreglut Pizza Flour (Caputo) [ Ссылка ]
200g Water, room temp
5g active dry yeast
12.5g Oil
6.25g salt
Directions:
Using the leaf attachment (not the dough hook) on the mixer, add the yeast, water and salt and mix at speed 2 for 2 minutes.
Add the flour and oil and mix for another 2 minutes on speed 1
Let rest for 30 minutes in the refrigerator
Shape dough into a ball and put in an air tight container and put back in the refrigerator for at least 3hrs or up to 24hrs
Remove dough 1hr prior to use.
Make sure pizza oven floor is 750º before baking.
Total baking time ~ 2 minutes
