Durga Puja Special- Ashtami Khichuri Thali
- Preparation Of Bhuni Khichuri
- Heat Veg Oil & Ghee
- Pour Dry Spices (Bay Leaf, Dry Red Chilli, Cardamom, Cinnamon, Clove)
- Add Mixture Of Ginger Paste, Turmeric, Chilli, Cumin & Salt
- Pour Cashew, Kismis, Raw Peanuts
- Cook Them On Low Flame For 5 Minutes
- Soak 250 gm Gobindo Bhog Rice & 250 gm Moong Dal
- Wash Them Well & For Better Result, Soak Them For 30 Minutes
- Remove Excess Water & Cook With Masalas For 5-10 Minutes
- Then, Pour 1 Ltr Water (Double Of Rice & Water)
- Salt & Sugar As Per Taste
- Chillies & Ghee
- Cook Them For 10 Minutes On Low Flame
- Give It Good Rest(30 Minutes At least) Meanwhile Prepare Labra (Mix Vegetable)
- Preparation Of Labra
- Heat A Pan With Mustard Oil
- Temper Panch Phoron, Chillies & Ginger Paste
- Cook Them With 2 Chopped Tomatoes Until Masala release oil
- Add Chopped Potato, Carrot, Radish, Pumpkin
- Add Salt As Per Your Taste
- Cook Them With Lid Until They Become Soft
- Add Chopped Cabbage, Long Beans, Cauliflower, Ridge Gourd, Pointed Gourd
- Cook Them Until They Become Soft
- Lastly, add Malabar Spinach & Cook Them For 10-15 Minutes more or water drying up.
- Add Turmeric, Chilli & Roasted Masla 1 Tbsp Each
- Cook Them Well
- Lastly Add Fried Brinjal
- Garam Masala & Sugar
- Give Them A Good Mix
- Then, Your Labra is ready to Serve With Khichuri
- Approx, cooking time 1 hour
- Preparation Of Chatni
- Heat 1 Tsp Oil
- Temper Panchphoron & Dry Red Chilli
- Pour 250 gm Chopped Tomato
- Add Pinch Of Salt
- Cover The Lid & Cook For 10 Minutes On Low Flame or Until Tomatoes Become Soft
- Now, add pinch of Turmeric Powder & Cook Them Until Smell Gone
- Add Sugar 100 gm
- Cashew & Raisin (Optional)
- Cook Them For 4-5 Minutes
- Add Roasted Chatni Masala (Dry Roast Mustard Seeds with Fennel Seeds & Dry Red Chilli, Then Make Powder Of It)
- Spread It Over Your Chatni & Serve It Now
- Preparation Of Beguni
- Make A Batter Of Gram Flour 4 Tbsp
- Rice Flour 1 Tbsp
- Pinch Of Salt, Turmeric, Chilli Powder
- Ajwain & Ginger Paste
- Water As Required
- Make A Thick & Smooth Batter Of It
- Dip Thinly Slie Brinjal
- Deep Fry Them On Medium Heated Oil
- Serve Your Bhoger Khichuri Thali
