Big Plate Chicken is a famous Xinjiang cuisine. It becomes one of the most popular recipe around the world.
Ingredients:
Chicken(1-1.5 lb)
Chinese fermented black bean sauce (dou ban jiang)*2 spoons
Ginger
Green Onion
chili pepper
green peppers
Dark soy sauce
Pepper
Cooking wine
Garlic
Sichuan pepper
bay leaves
Noodles
Suger*2 spoons
Potatoes
Star anise
Beer*1 can
Steps:
1. Slice green onion and ginger
2. Boil the chicken in cold water with ginger, green onion and cooking wine till cooked
3. Slice potatoes and green peppers
4. Heat the wok on high heat and add oil. When the oil has heated, add sugar *2 spoons and mix well
5. When the sugar has melted into the oil, put in the chicken and stir fry this until it is browned. The melted sugar will give the chicken a nice golden color
6. Add Chinese fermented black bean sauce and stir fry
7. Add star anise, sichuan pepper and bay leaves
7. Add green onion and ginger
8. Add potatoes
9. Add dark soy sauce
10. Add beer
11. Cook the noodles and put on the plate
12. Add garlic and chili pepper into chicken
13. Dish out and put the chicken on the top of the noodles
