Pastel Buns is a Filipino soft bun with yema (custard) filling originating from the province of Camiguin. The name is derived from Spanish pastel ("cake"). Soft and chewy buns filled with custard/yema. Enjoy!
Here's what you'll need:
For the bun:
4 cups all purpose flour (500g)
¼ cup sugar 50g
2¼ tsp instant yeast 7g
1 tsp salt 5g
2 eggs beaten
1 cup whole milk (200g)(evap, uht or fresh milk)
½ cup melted butter
Yema Filling:
5 egg yolks
1 can condensed milk 397g
¼ cup whole milk
1 tsp vanilla 5g
2 tbsp butter
