Now that it's November, we all have Thanksgiving on our minds! If you just can't wait for that apple pie this year, try making a Mindful Apple Pie yogurt Parfait! It's a perfect breakfast or snack.
Recipe: Makes 1 Serving
-1 tablespoon pecans, chopped
-1/4 cup apple, cored, but not peeled, diced into ¼”inch pieces
-1/4 teaspoon ground cinnamon
-5/8 teaspoon ground nutmeg
-3/4 teaspoons brown sugar
-1/2 cup Greek yogurt
- 1 tablespoon granola
Instructions:
(Optional)To toast the pecans: Preheat the oven to 400 degrees. Arrange pecan pieces on a baking sheet and bake for 3-5 minutes. Remove from oven and allow cooling.
In a mixing bowl, combine pecan pieces, diced apple, sugar, cinnamon and nutmeg. Toss well to combine. In a small glass or parfait cup place the apple mixture, then the yogurt. Top with a sprinkling of granola and enjoy!
