Ingredients (for 2 servings):
-1/3 cup feta, divided
-2 eggs
-freshly cracked black pepper
-extra virgin olive oil
-1 large piece naan, cut in half
-1 avocado, thinly sliced
-kosher salt
-drizzle of balsamic vinegar
-drizzle of spicy honey (I used @naturenates hot honey)
-1 small heirloom tomato, diced
-green onion, thinly sliced, for garnish
Directions:
-Heat a small nonstick skillet over medium-high. Spread out half of the feta around the rim of the pan, leaving a circle in the middle. Crack one egg in and cover to fry until the feta is deep golden brown and crispy. Repeat with the other egg. Set both aside, but leave the pan on the heat.
-Drizzle a bit of olive oil on both halves of the naan and place them into the hot pan to toast. Flip and toast the other sides until both sides are warm and lightly golden.
-Spread the avocado slices on each piece of naan bread and sprinkle on some kosher salt. Top the avocado slices with the feta eggs, and drizzle on some balsamic vinegar and spicy honey. Top the eggs with the tomato slices and green onions. Serve and enjoy!
