Tamilnadu style carrot stir fry made with coconut. This can be served as a side in a south Indian meal consisting of rice, rasam or sambar. However it also goes well with variety rice items like coconut rice, lemon rice, curd rice or pudina rice.
Ingredients
Carrot chopped 250 grams
1 ½ tbsp. oil
¼ to ½ tsp mustard seeds
1 to 1½ tsp urad dal
1 to 1½ tsp chana dal
Pinch of hing
1 sprig curry leaves
1 broken red chili
1 chopped green chili
2 to 3 tbsps of grated fresh coconut
1/8 tsp turmeric
Salt as needed
