Benoit Amsler and Titouan Briaux had big dreams of bringing a Swiss wine and fondue bar to New York City. What they didn’t dream of was the harsh reality that their restaurant would be opening in the midst of COVID-19 and during times of particular strain on the hospitality industry. The Consulate sat down with the pair to discuss the challenges with opening something new during a pandemic, their native Lavaux region being a UNESCO World Heritage site, and how they have successfully created a uniquely authentic Swiss experience in the West Village.
Disclaimer: indoor dining in NYC is currently closed however Lavaux continues to serve outdoors and they have even created a takeaway DIY fondue set.
