Cooking the whole chicken underground was a successful experiment. It cooked to perfection though it took almost 4 hours. The chicken turned out juicy and flavors were married harmoniously. I saw a vegetable vendor selling fresh double beans, nostalgia hit me as up my mother used a lot of double beans in her cooking while growing up. I combined the fresh double beans with green peas to make the pulav, it turned out tasty.
Butter roasted sweet potatoes are out of the world experience and are also a regular in our house. My dogs love it too, it makes a healthy treat for them.

Ingredients
fresh double beans
green peas
1 tbsp oil
1 large cinnamon
5 cloves
2 inch ginger
6 small onions
6 green chillies
1 tsp turmeric powder
2 tbsp red chilli powder
1 tbsp coriander powder
mint leaves
coriander leaves
butter
salt as per taste
Roasted chicken
⦁ Heat oil in a pan and add onions, cinnamon, cloves paste
⦁ Add ginger and garlic paste, and curry leaves. Fry till it looses the raw odour
⦁ Add turmenric powder, chilli powder, coriander powder, and salt
⦁ Add mint and coriander paste
⦁ Score the chicken well and use the fried paste to marinate it
⦁ Wrap the chicken in banana leaf and aluminium foil
⦁ Make a small pit, place a banana leaf and the chicken with its breast side up
⦁ Place firewood stove above the pit and start fire. Let it cook for 3 to 4 hours
Double beans and Peas Pulav
⦁ Add butter, cinnamon, cloves, green chillies, onions, ginger and garlic paste, fry till the raw smell is gone
⦁ Add the double beans and green peas, close the lid and cook till half done, add water to aid cooking if necessary
⦁ Add little turmeric powder, chilli powder, mint, and coriander leaves
⦁ Add water and butter check for salt
⦁ Once the water boils, add the soaked rice and cook till done
