This White Chicken Chili recipe is one of our absolute FAVORITES and is a staple in our home on wheels. We will freeze an entire batch and keep it around for a quick lunch or dinner anytime.
Although it is called a chili, it has more the texture of a soup. I guess it's considered a chili because of the beans?
This has a slightly mexican flavor, but is still mild - you can adjust the amount of salsa verde if you would like more kick.
You can add cheese and sour cream on top if desired.
I seriously love this soup so much. We can't stop making it.
This recipe is gluten free and clean eating friendly - make it even cleaner by making your own chicken broth, your own salsa verde and using dry beans instead of canned. We aren't as strict so we don't mind using this stuff.
If you don't have an Instant Pot or pressure cooker, you can make this on the stovetop or in a crock pot. We have done both and it always comes out great.
Here is Brian's version of the recipe, tweaked over our many times making it to get it exactly how we like it :) We hope you enjoy!
WHITE CHICKEN CHILI INGREDIENTS:
- 2 TBS olive oil
-10 oz salsa verde
- 2 small onions or 1 large onion, chopped
- 16 oz bag frozen corn (we like the white/gold mix)
- 2 lbs boneless, skinless chicken breast
- 6 green onions
- 1/3 cup freshly chopped cilantro
- 1 1/2 TBS ground cumin
- 5 cloves minced garlic
- 48 oz chicken broth
- 2 cans canellini beans
Can be made in instant pot, on the stove top, or in a crock pot.
