This was a little bonus & pleasant surprise on our Turkish cooking class. These dumplings were made from leftover dough from manti. See recipe below for dough & filling:
Ingredients:
5 cups flour
2 teaspoons salt
2 eggs
2 cups water
1 onion, finely diced
Directions:
“Turkmen Manty” Turkmen Steamed Dumplings
2 lb. ground beef 2 teaspoons salt Black pepper
1⁄4 cup water
For this dish you would need a multiple layer steamer to cook the dumplings. It may be found in International markets.
First, make the dough. Combine flour, salt, and eggs in a bowl. Add a small amount of water at a time and knead until you have a hard dough. Divide the dough into 4 parts. Cover with the plastic wrap and let it rest. Meanwhile, prepare the filling. Mix together the meat, onion, and water. Season with salt and black pepper.
On a lightly floured surface, roll out each dough piece to a very thin circle. With the pizza cutter or knife cut it into 4 in. squares. Put a tablespoon amount of meat filling on the dough square. Pinch the corners to the center. Pinch all the edges of the dough closed. Then pinch the two corners together on each side. Shape the rest of manty dumplings.
Boil the water in the bottom part of the steamer. Grease the steamer trays with butter or brush with oil. Arrange the manty in the steamer. Place the trays on top of the boiling water. Close the lid and cook for 45 minutes. Serve with sour cream if desired.
