🥚 Filling
2 salted duck egg yolks
50 g (3½ tbsp) unsalted butter, room temperature
50 g (½ cup) icing sugar
20 g (2½ tbsp) milk powder
20 g (2½ tbsp) custard powder
🥚 Dough
150 g (½ cup + 2 tbsp) warm water
4 g (1 tsp) granulated sugar, to activate yeast
3 g (1 tsp) active dry yeast
300 g (2¼ cup) Hong Kong flour / bao flour / low protein wheat flour
8 g (2 tsp) granulated sugar
3 g (½ tsp) table salt
7 g (1½ tsp) vegetable oil
