Ingredients:
2 tablespoons olive oil
4 chicken drumsticks
3 garlic cloves, peeled and grated
2 large onions, peeled and sliced
1 teaspoon salt
1 teaspoon ginger
1/4 teaspoon black pepper
1/2 teaspoon ground coriander
1 teaspoon turmeric
1 cinnamon stick
100 ml (1/2 cup) water
60g (2 oz) raisins, soaked in water for 20 minutes
1 tablespoon honey
Steps
1- Heat up olive oil in a tagine or pot.
2- Add the chicken, garlic, and half an onion, garlic. Saute for 5 minutes.
3- Season with salt, ginger, black pepper, ground coriander, and turmeric, then mix to combine.
4- Add the cinnamon stick, and water.
5- Place the remaining onions on top of the chicken. Cover the tagine, then cook until tender (about 30 minutes).
6- Drain the raisins, then add them to the pot.
7- Sprinkle the honey on top, then cook until the sauce thickens (about 10 minutes). Enjoy!
