Caio shows up every Sunday on Boteco's patio to grill up his take on the burger: he starts with the flavorful picanha cut (top of the top sirloin), cuts off the fat, grinds the beef, throws 10% of the fat back in (damn right!), and forms a 7oz patty with 13 other secret ingredients. From there you choose add-ons (mozz, cheddar, Swiss, bacon), before he spreads some parsley-garlic mayo on a custom bun that's got a tough exterior but a tender inside, presumably inspired by every Hulk Hogan movie ever.
