This video is about KINGSFORD PROFESSIONAL VS B&B Briquets in a head to head shootout to see which is the better charcoal for SCA Steak Cooking.
Keep in mind, that while ANY charcoal is good for cooking on, I am trying to show that different charcoals perform differently.
In SCA Steak Cooking many of us use Grill Grates. We do this to put grill marks on the steak. So in effect the Grill Grates are our heat source. The charcoal is the means to an ends by getting the grates hot enough to "Weld" good marks on our steak. And the hotter you get the grates, the better your marks are.
Also, I want repeatable results. I am looking for "Drop", and overall time and temperatures.
The drop is what happens when the charcoal compacts. The more the charcoal compacts, the further your coals are from your grates, and therefore less heat on your cooking surface.
