HANDI PANEER DHABA STYLE
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 4-5
Ingredients
For Ginger Garlic Paste
½ inch Ginger (peeled & roughly chopped) अदरक
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
10-12 no. Garlic cloves, लहसुन
For Dhaba Style Handi Paneer
½ cup Oil, तेल
1 heaped tbsp Ghee, घी
4 no. Bay leaf, तेज पत्ता
10-12 no. Black peppercorns, काली मिर्च के दाने
3 no. Black cardamom, बड़ी इलायची
1 tsp Cumin seeds, जीरा
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
3 no. large Onions, chopped, प्याज
2 heaped tbsp Coriander powder, धनिया पाउडर
½ tbsp Black peppercorns, crushed, कुटी हुई काली मिर्च
2 tsp Turmeric powder, हल्दी पाउडर
1 ½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 ⅓ cups Curd, beaten, दही
3 no. large Tomatoes, chopped, टमाटर
1 ½ cup Water, पानी
3-4 tbsp Prepared Handi Masala, तैयार किया हुआ हांडी मसाला
3-4 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
1200 gms Paneer, cut into medium cubed, पनीर
For Handi Masala
¼ cup Coriander seeds, धनिये के बीज
½ tbsp Fennel seeds, सौंफ
1 tbsp Cumin seeds, जीरा
2-3 tbsp Black peppercorns, काली मिर्च के दाने
1 heaped tbsp Cornstarch, कॉर्नस्टार्च
For Garnish
Coriander sprig, धनिया पत्ता
Green chili, हरी मिर्च
Process
For Ginger Garlic Paste
● In a mortar pestle, add ginger, green chillies, garlic and grind it coarsely.
● Keep it aside for further use.
For Dhaba Style Handi Paneer
● In a handi, add oil, ghee, once it's hot, add bay leaf, black peppercorns, black cardamom, cumin seeds and let it splutter.
● Add prepared ginger garlic paste and saute it for a minute.
● Add onions and saute it until translucent.
● Add coriander powder, crushed black peppercorns, turmeric powder, degi red chili powder, curd and saute it for a while.
● Add tomatoes and cook it for 5-6 minutes on medium flames until mushy.
● Add water as required and give it a quick boil.
● Finish it with prepared handi masala, fresh coriander leaves, salt to taste, paneer and simmer it for 5-6 minutes on low flames.
● Transfer it to a serving bowl or dish, garnish it with coriander sprig and green chili.
● Serve hot with roti or paratha.
For Handi Masala
● In a pan, add coriander seeds, fennel seeds, cumin seeds, black peppercorns and roast them for a while until aromatic.
● Transfer it to a mixer grinder jar and grind it smoothly.
● Transfer it to a tray, add cornstarch and give it a good mix.
● Keep it aside for further use.
