Ingredients:
-legumes of your choice
- lemon juice or apple cider vinegar
- salt
- kombu (optional)

- cooking pot
Directions:
1. Start by selecting the dry legumes. Choose organic whenever possible. Look for legumes that are relatively uniform in size and color. Do a quick sort and discard any legumes that are cracked or broken, and any stones or debris that may have gotten into the batch.
2. Give the legumes a good rinse under cold running water.
3. Place legumes in the pot that you are going to cook them in and cover them with plenty of recently boiled water, plus a couple tablespoons of an acidic medium, such as lemon juice or apple cider vinegar (1 cup legumes : 2 Tbsp. acidic medium). Let soak for about 8-12 hours. Drain and rinse again.
4. Cover the legumes with plenty of fresh water. Place a piece of kombu in the pot. Cover, bring to a boil and skim off any foam that rises to the top. Reduce heat to simmer and cook until tender. When the beans are cooked, remove turn off the heat and add salt. Keep the beans covered and let them soak in the salty water for at least 15 minutes, up to two hours (adding salt too early with prevent the beans from cooking).
5. Drain and rinse. Enjoy!
