- 1 cup basmati rice (soaked for 10 minutes)
- 2 tbsp olive oil
- 1 onion, finely sliced
- 1 tsp garlic ginger paste
- 4 cardamom pods
- 4 cloves
- 2 bay leaves
- 2 medium potatoes, peeled and diced
- 1 can (400 ml) coconut milk
- 2-3 scallions, chopped (for garnish)
**Instructions:**
1. **Marinate the Chicken:**
In a bowl, marinate the chicken thighs with chili powder, salt, garlic ginger paste, turmeric powder, and curry powder. Let it sit for at least 15-20 minutes to absorb the flavors.
2. **Soak the Rice:**
While the chicken marinates, soak the basmati rice in water for 10 minutes. Drain and set aside.
3. **Sear the Chicken:**
Heat olive oil in a large pot over medium-high heat. Add the marinated chicken thighs and sear them on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the pot and set aside.
