Here is the recipe for Pani Pol Coconut Pancakes
Ingredients:
● Pani Pol
● 3/4 cup- Kithul/ Coconut Treacle
● 2 cups of freshly grated Coconut
● 4 seeds- Cardamoms (Crushed)
● 1- Pandan Leaf
● Pinch of Salt
Coconut Pancake Batter:
● 1 cup- Flour
● 1 cup- Coconut Milk
● ¼ cup of Water to Dilute
● Egg
● 1 tsp - Turmeric Powder
● Salt
Method:
1. In a pot, heat the kithul treacle until foam starts to appear and add crushed cardamom pods, pandan leaf and salt. Mix well and let it simmer for 5 minutes
2. Add the coconut and mix well to coat with the treacle and cook for another 3 minutes and take off the heat
3. In a mixing bowl, mix flour, turmeric powder and salt
4. Whisk in the egg and coconut milk. If the batter is too thick slowly add water while whisking until you get a thin consistency and no lumps
5. In a flat pan, pour the batter using a ladle and make crapes
6. Roll the cooked crepes with the pani pol and serve
