There are currently some great deals in the supermarkets for specialist cuts of meat. We purchased a huge Porterhouse steak which was over an inch in thickness and covered it in a homemade rub. This was a real treat and absolutely delicious. A tablespoon of the rub on each side (not forgetting the edges) and store the rest of your rub for future BBQs.
We seared the steak on both sides for a minute, directly over the hot Weber lumpwood. We then moved the steak away from the direct heat and cooked for a further 12 minutes. We removed the Porterhouse and let rest for as long as our taste buds would allow! The result, a beautifully cooked medium steak!
