Ingredients:
350 grams of sugar cookies
750ml. heavy cream (33%)
Zest and juice of 2 limes
Pinch of salt
4 tbsp of sugar
120 gr of melted butter
Recipe:
Preheat the oven to 190 degrees Celsius.
To make the crust, crush your cookies into crumbs, then add melted butter and mix until it holds together when pinched and starts to look like dough. Press the dough into a tart pan. Transfer to the oven and bake for about 8 minutes.
Meanwhile, combine the heavy cream, sugar and lime zest in a large pot. Set over high heat and bring to a boil. Once boiling, boil 5 minutes and then remove from the heat and whisk in the lime juice, and a pinch of salt. Let cool 10 minutes.
Carefully pour the lime cream into the baked crust. Cover and chill in the refrigerator for an hour or until set.
