This Spinach & Basil Pasta is packed with nutrients & flavour! You should definitely give this recipe a try next time you’re craving Pasta ♥️
Here’s what you’ll need to make this at home☺️
Ingredients :
Spinach - 1 Cup
Basil - 1/2 Cup
Any Pasta of choice, I’m using macaroni- 3/4th Cup/ 70g- you can add upto a cup of pasta as well (100 grams)
Milk of choice - 1/2 Cup
Butter - 1 Tablespoon
Olive Oil - 1/2 Tablespoon
Garlic - 4 Cloves
Chilli Flakes - 1/2 Teaspoon
Cashews (Soaked in hot water for 20 minutes) - 2 Tablespoons
Cherry Tomatoes (Halved) - 1/2 Cup
Salt & Pepper - to taste
Parmesan Cheese - to garnish
Process :
• In a pot - blanch spinach with basil leaves in boiling water (for 30-60 seconds) & transfer them into a bowl of ice cold water to retain its green colour- squeeze the water out completely
• To a blender - add blanched spinach & basil leaves, 2 cloves of garlic, milk, salt & pepper to taste, soaked cashews & blend it smooth
• In a separate pot - boil the pasta in salted water till al dente (70% cooked) & reserve some of the pasta water for later
• To a saucepan - add in the butter, olive oil, sliced garlic, chilli flakes, spinach & basil purée & sauté for about 1-2 minutes
• Add in the reserved pasta water to adjust the consistency of the sauce
• Add in the boiled pasta, halved cherry tomatoes, season with salt & pepper to taste & give it a good mix!
• Serve, Garnish & Enjoy 🍝🌱
