Poutine is Canadian classic which includes fries cheese and gravy. I mean come on who wouldn’t like some poutine. Once we tried it we knew those Canadians were on to something. Traditionally poutine is made with beef gravy but we gave it a shot with some chicken gravy instead. It turned out so amazing that we couldn’t stop eating it. Honestly, we filled up on poutine so much that we ended up skipping dinner that night. Hope you guys give it a try and let us know which variation (chicken, beef or vegetarian) you end up making in the comments below.
Ingredients
- 4 large russet potatoes
- 2 tbsp butter
- 1/4 cup flour
- 4 cups chicken broth
- Freshly cracked black pepper
- 2 tsp Garlic powder
- Salt to taste
- 8 oz cheese curds
Directions
Fries :
1. Make sure to wash and clean potatoes and keep the skin on. You can have peeled potatoes if you prefer. Now cut your potatoes long way in the shape of fries.
2. Put the fries in cold ice water for about 30 mins. This will help remove excess starch and keep them from oxidizing.Take them out and place them on paper towel and make sure to dab the excess water.
3. Heat a heavy stock pot with oil. Make sure that oil temperature reaches 325 F.
4. Now add 2 handfuls of potatoes to hot oil. There should be at least 1-inch of oil above the potatoes. Par cook until potatoes are light brown, 5 to 7 minutes. Remove potatoes, gently shaking off excess oil and let drain on rack. Repeat until all of the potatoes are par cooked.
5. Raise heat of oil to 350 deg F
6. Cook potatoes again, 2 handfuls at a time, until golden brown, about 2 minutes. Remove from oil, shake off excess oil, and season lightly in a bowl with salt and pepper. Repeat until all potatoes are cooked.
Gravy :
1. Melt butter in a saucepan over medium low heat. Gradually whisk in flour, reduce heat to low and stir until the roux turned golden.
2. Whisk chicken broth and cook, stirring occasionally until gravy is thick enough to coat the back of a spoon.
3. Now add your seasoning and stir well. Adjust seating per your preference. Gravy should be ready now.
Assembly :
- Layer down fries in small baking pan or mini skillet, then handful cheese curds and pour gravy on top.
- Now place the skill in the over. Make sure to have your oven in broil setting and broil for about 3-5 minutes(until cheese curds starts melting)
- Remove skillet, add new layer of fries, curds and pour gravy.
Your Amazing pouting recipe is ready to serve. Feel free to use store bough frozen fries instead of making fries at home. It shouldn’t alter the taste.
