Using the “special” uni to make uni pasta!
Even though the uni didn’t look great to eat, they didn’t taste fishy so I used the leftovers to make uni pasta.
Ingredients:
10 pieces of uni (2-3 pieces for topping)
1/2 cup cream
1 clove minced garlic
1 tablespoon avocado oil
1/2 teaspoon salt
1 tablespoon soy sauce
2 tablespoon crushed roasted seaweed
1 teaspoon butter
1/4 cup reserves pasta water
1 serving linguine
Instructions:
1. Put 7-8 pieces of uni in a blender, reserving 2-3 pieces to use for topping. Add cream into the blender and blend until smooth.
2. Add linguine into boiling water seasoned with salt and cooked until al dente.
3. In a pan, heat avocado oil and add minced garlic.
4. Once fragrant, add uni cream gently, soy sauce and mix together.
5. Add salt and roasted seaweed, mix well.
6. Add pasta, butter and pasta water. Mix together until the sauce is nice and creamy.
7. Serve the pasta with uni on top and enjoy!
