Welcome to LPR KITCHEN. In this video we are sharing a recipe from Trinidad and Tobago " The Ultimate pepper shrimp ". The pepper shrimp is cooked in the very famous trini style. A must try recipe for all the seafood lovers out there.
Ingredients for tasty pepper shrimp recipe
(1) 1 & 1/2 lb / 650 grams large or medium shrimp in shells.
(2) 2 tbsp salt.
(3) 3 tbsp vegetable oil.
(4) 4 cloves garlic minced.
(5) 1 tbsp fresh chopped hot pepper or 1 tbsp hot chili sauce.
(6) 2 tsp sugar.
(7) 1 tbsp Worcestershire sauce.
(8) 3 tbsp tomato ketchup or paste.
(9) 1/4 cup water.
(10) 2 tsp cornflour for thickening.
(11) 1 tbsp dry wine optional.
(12) 1 tbsp finely chopped chives or green onions.
(13) 1 tsp minced ginger.
How to cook pepper shrimp :
(1) Cut shrimp through back of shell with kitchen scissors and remove vein.
(2) sprinkle shrimp with one tbsp salt and rub in. Leave for 15 minutes.
(3) Rinse well and pat dry.
(4) Add 1/2 tbsp salt to shrimp mixing well.
(5) Heat two tbsp oil in pan. add shrimp and stir- fry until shrimp is cooked. remove from pan.
(6) Heat rest of oil , add minced garlic and ginger
stir-fry for 10 seconds.
(7) Blend all ingredients for cooking sauce together. Except chive.
(8) Return shrimp to pan.
(9) mix corn flour with 4 tbsp water add into pan and stir continuously for a few seconds until sauce bubbles and thickens.
(10) Garnish with sliced chives.
