Stuffed aubergines is one of the traditional and best known dishes in Greece and Turkey 😉. It is also one of my favourite dishes to cook because of its simplicity and delicious flavour. Irresistible combination of flavours and taste. It is so yummy, healthy and great for any season mostly for summer time. Eat light and feel great with this recipe! Ingredients
• 3 aubergines / 800g
• 200g feta cheese
• olive oil, salt, pepper
• 1tsp chilli flakes
• 1 large onion/ 200g
• ½ tsp chili flakes / chili pepper
• 1tbsp sugar
• 1 kg fresh tomatoes/ grated or blended
• 20g fresh or dry mint or basil
• 10g fresh thyme
Method
1. Preheat the oven to 190 C . IF YOU ARE NOT USING THE OVEN, YOU CAN BOIL THEM IN SLIGHTLY SALTED WATER FOR ABOUT 10 min.
2. Cut the aubergines length ways, and with a knife, score their flesh in a criss-cross pattern.
3. Transfer to a baking tray lined with parchment paper and add olive oil, salt, pepper, and roast them for 20 min / if you are not using the oven, you can boil them in slightly salted water for about 10min.
Stuffing
1. Place a frying pan over high heat and add the olive oil.
2. Add sliced onion and sauté for 10min. until the onions are nicely caramelized.
3. Add blended or tinned tomatoes, sugar, salt, pepper, chilli flakes, mint leaves and simmer at low heat for 10 min until moisture evaporates.
To assemble
1. Remove the aubergines from the oven and carefully press down the criss-cross sections so you can make enough room to add the filling.
2. Add the tomato mixture just to cover the bottom of a frying pan
3. Divide the filling between the aubergines and cover with feta cubes and sprinkle with thyme, and cook for 10min.
