these homemade snickers ice cream bars are dairy free and refined sugar free, and perfect for summer! full recipe video posted a week ago and full written recipe below👇🏻
ice cream layer
•3/4 cup + 2 tbsp (7oz) full fat canned coconut milk
•1/4 cup natural peanut butter
•2 tbsp raw honey or pure maple syrup
•1 tsp pure vanilla extra
•1/4 tsp salt
peanut butter caramel
•1/2 cup natural peanut butter
•2 tbsp raw honey or pure maple syrup
•1/8 tsp salt
•3 tbsp full fat canned coconut milk
•peanuts (for topping the caramel)
chocolate coating
•6-9oz dark or semi-sweet chocolate (i use dairy free and refined sugar free)
•2-3 tsp coconut oil (optional)
instructions
1. add the ice cream ingredients to a high speed blender and blend until smooth and creamy. pour the mixture into an 8x5 loaf pan lined with parchment paper and place in the freezer for several hours.
2. after several hours, mix together the peanut butter caramel. remove the frozen ice cream layer from the freezer and spread the caramel over the ice cream. top with as many peanuts as you like then gently press them into the caramel. place the loaf pan back in the freezer for several more hours until the caramel has hardened.
3. once hardened, melt the chocolate in the microwave or on the stovetop using the double boiler method (i like to add 2-3 tsp coconut oil to help thin the chocolate).
4. remove the frozen dessert from the freezer and slice into 8 bars. coat the bars in the melted chocolate and place on a tray lined with parchment paper then place back in the freezer until the chocolate has hardened.
5. once the chocolate has hardened, remove the bars from the freezer and enjoy (i like to let the bars sit out for several minutes before consuming so the ice cream layer is creamier). store leftovers in the freezer!
