INGREDIENTS:
FOR THE SPONGE
* 150g Whole Eggs
* 100g Caster Sugar
* 80g All-purpose Flour
* 10g Corn Starch
* 20g Milk
* 15g Butter
* 7g Green Tea Matcha Powder
FOR THE RUM LIGHT SYRUP
* 75ml Boiling Water
* 37g Caster Sugar
* 1/4 tsp Vanilla Bean Paste
* 25ml Rum (Optional)
FOR THE STRAWBERRY COMPOTE
* 15g Caster Sugar
* 5g Pectin
* 100g Strawberry Puree
* 100g Chopped Strawberries
* 100g Chopped Strawberries
FOR THE FILLING
* 180ml Whipping Cream
* 180ml Heavy Cream
* 1/2 tsp Vanilla Extract
* 18g Caster Sugar
* 5g Gelatine Powder
FOR THE TOPPING
* Whipped Cream (200ml Heavy Cream + 10g Sugar)
* Strawberries
I used a 7 inch (17cm) round pan. Use circular cake cutters to cut cake circles that are 6" and 4.5".
