Curry puffs are one of the many favourite kuih / snacks.
Here, my version of curry puff with potato filling.
Ingredients for curry puff filling
1 onion, diced
2 cloves of garlic, chopped
1 sprig curry leaves, chopped
3 large potatoes, diced
1/4 tsp turmeric powder
1 tbsp curry powder
1.5-2 tbsp chili powder
1/4 tsp white pepper powder
0.5 tsp sugar, optional
1 cup of water
salt
oil
Ingredients for curry puff dough
3 cups of all purpose flour
3 tbsp margarine
3 tbsp cooking oil
1 cup of cold water, (I reduced 2 tbsp, adjust to flour consistency)

Method
1. Heat a pan with oil. Sauté onion, garlic and curry leaves.
2. Add potatoes, turmeric, curry and chili powder. Combine well.
3. Add water, white pepper, sugar and salt. Cook till potatoes are fork tender and completely dry.
4. Keep aside and let it cool.
5. To make a dough add flour and salt in a bowl. Mix well.
6. Separately heat a pan, add margarine and cooking oil. Mix and stir till melt.
7. Remove from the heat and add into flour. Use spatula to mix.
8. Add water and knead till it does not stick to your hand. Cover and rest for 30mins.
9. Shape into small balls. Roll it flat till can fit your curry puff mould.
10. Fill with potato. Press the mould tightly to seal and keep it aside for frying.
11. Deep fry curry puff using medium heat until golden colour.
