This is Takikomi Gohan, or seasoned rice. White rice is a perfect compliment to most dishes. But "takikomi gohan" is its own dish.
It can be made with a number of different ingredients, but as the cold seasons approach, I thought I'd use some Autumn/Winter ingredients to spice up this dish.
Today we are using:
3 cups of rice (2 cups if you want a stonger flavor)
2 tsp. sugar
2 tsp. dry dashi (fish stock) *this is optional if you can't find/make this
1/2 tsp. salt
2 tbs. Mirin/Soy Sauce/Cooking Sake (料理酒)
1/4 Carrot
1/2 Pack of Shimeji Mushrooms
1 Shiitake Mushroom
1 Enoki Mushroom
1 Atsuage (Thick fried tofu)
160g Chicken Thigh
*I garnish this with Takuan or pickled daikon
This is a wonderful dish that is easy to make and is especially good in the colder seasons. All you have to do is put everything in the rice cooker and hit cook.
If you don't have a rice cooker, you must buy one. They last forever and they are game changers in the kitchen. As you can see in the video, mine is very seasoned.
