Pom With Chicken. Surinaamse Pom met Kip. Malanga Coco Casserole with Chicken.
Description:
This dish consist of 3 steps.
1. Preparing the chicken
2. Mixing the grated malanga coco/pomtayer
3. Assembling the pom
Step 1. Preparing the chicken
Ingredients :
1 stick of salted butter (8 tbsp)
1 tbsp oil
2 tomatoes
2 onions
8 garlic cloves
1 tsp black pepper
1 tsp salt
3 chicken cubs
4 whole all spice
2 lbs chicken pieces
1 tbsp ketchup
1 cup celery
4 cups hot water
Step 2. Mixing the grated Malanga coco/pomtayer
Ingredients:
2.2 lbs ( 1000 gr) grated malanga coco / 1 kg pomtayer
1 cup celery
1 cup pickles
1 cup ketchup
Take the chicken out of the sauce and mix the ingredients together with half of the sauce in the Malanga coco/pomtayer.
Step 3. Assembling the Pom
Combining step 1 and 2 together in layers.
- add the bottom layer of the malanga coco/pomtayer mix in the baking pan
- layer the chicken and pour some sauce over it
- add the top layer of the the Malanga coco/pomtayer mix
- cover with sauce
- slowly move a fork in the mix to remove air pockets
- add some butter slices on top
Preheat oven at 450 F and bake for 30 minutes.
Turn the baking pan and lower the temp to 400 F and let bake for another 30-45 minutes until golden brown.
Prick it with a satay stick and if it comes out clean means it’s done.
