Good people, coming off my most recent video(MAPLE BACON) we roll right into this pork belly vid. I smoke up some pork belly real low and slow. That's 200° low. Right, and so as that happens we do raise up the temp to 250 to finish them off as they stalled out at 165 ish. In the end, this pork belly was extremely delicious and tender as it was tender enough for my 2 year old to eat it without any issue. I really hope you guys get your hands on some belly sooner rather than later because it's a easy, forgiving cut of pork to cook/smoke.
