The Wusthof Ikon is Wusthof's flagship, top-tier line. It uses their proprietary 58 hardness steel and is ground to an insanely sharp 14 degree angle. A full tang and extremely ergonomic handle finishes the knife off and makes it a pleasure to use.

The Wusthof Gourmet is the entry level knife created to compete directly with brands like Victorinox. The knife is still made in Germany. However, it is stamped and machine made and sharpened to a 18.5 degree angle. With that said, it still comes with a lifetime warranty and a full tang.
