Tender, naturally sweetened carrot cake bites with dates, carrots, walnuts, cinnamon, and coconut. So simple, delicious carrot cake flavor, and the perfect healthier snack or dessert! They're vegan, no-bake and seriously delicious!
Ingredients
* 1 cup chopped carrots
* 1/2 cup walnuts
* 1/2 cup cashews
* 1/2 cup dessicated coconut
* 1 cup oats (rolled or quick)
* 12 medjool dates
* 1 tsp cinnamon powder
* 1 tbsp maple syrup
* 1/2 cup shredded coconut for rolling
Instructions
* If your dates aren’t moist , then place in the warm water for 10 min.
* Add the carrots into a food processor and blend until finely chopped.
* Add the walnuts, cashews and dessicated coconut, oats dates and maple syrup. Add all the ingredients and blend until a dough comes together.
* If it is not mixing, you may need to remove the lid and stir occasionally to encourage things along. You’re not looking for a paste or purée here, but a tender, crumbly dough.
* Shape the dough into tablespoon-sized balls. Repeat until all of the mixture has been used.
* Roll in finely shredded coconut and enjoy immediately or refrigerate to chill/firm up. Place balls in an airtight container and store in the refrigerator for 1 - 2 weeks.
