I made two variations. One with fig jam inside and the other with just a drizzle of honey over top
INGREDIENTS
Makes 6
4 oz Goat cheese
3 Phyllo pastry sheets
3 oz Fig jam
3 tbsp Olive oil
INSTRUCTIONS
1. Preheat oven to 375F.
2. Place sheet of phyllo pastry on cutting board and brush with olive oil. Place another phyllo sheet on top, and brush with oil. Add a third and brush with more oil. Cut into 6 equal sheets.
3. Place ½ inch discs of goat cheese on each phyllo pastry square. On half of the squares, place fig jam.
4. Bring the sides of the pastry square upward so that it holds the filling in a ‘purse’.
5. Place each parcel on a parchment lined baking sheet and brush with olive oil.
6. Bake for 25 minutes at 375F or until golden brown. Enjoy!
