Filling
4 large peaches peeled and sliced
1 cup of vegan butter
1 tbsp of pumpkin spice mix
1 tsp of lemon juice
1/2 tsp of kosher salt
1 cup of brown sugar
3/4 cup of granulated sugar
1 tsp of vanilla
1-2 tbsp of water
1 tbsp of cornstarch slurry (cornstarch and 1.5 tsp of water
Crust
2 cups of self rising flour
1tsp of baking powder
1 cup of granulated sugar
1 tsp of pumpkin spice mix
1 cup of vanilla almond milk
a dash of cinnamon
Turn oven on 400
Add 1/2 -3/4 cup of vegan butter to a cast iron skillet. Place in the oven
Make the filling
Place a pan on high heat and add peaches. Cook for 1 min, should have some char on minimal peaches. Turn heat to medium and add vegan butter . Once butter has melted add remaining ingredients except for cornstarch. Cook for 2 mins and add cornstarch slurry) cook for 1 min
Make crust: blend dry ingredients then add wet ingredients and whisk
Grab cast iron out of the oven and add the crust mixture. Add the peach filling
Note: if you want your crust to over rise your peaches use less of the peach syrup. If you like less crust you can use half the crust mixture
