Mango Pickle Recipe is a traditional Indian condiment made with raw mangoes, spices and oil. In India, pickles are relished as a side dish in every meal. Indian cuisine is diverse so a mango pickle is made in different ways. Pickle has both the spice and sour flavor which alone can enhance the taste of any food you eat. Eating pickle enhances or increases your apetite. They are low in saturated fat and cholesterol and a good source of iron, vitamin A and fibres.
ingredients
mango - 1 1/2kg
rock salt-2tbsp
turmericpowder-1sp
Asafoetida powder-1sp
fenugreek -1sp
mustard seeds-1tbsp
mango to be cut in to small pieces. then add rock salt and turmeric powder to it and mix it well. then leave it for resting about half an hour. then place a pan and add fenugreek and mustard seeds for frying. then grind it after frying. then place a pan and add sesame oil to it. then add garlic and curryleaves to it and saute well.
tyen off the stove and add chilly powder and Kashmeeri chilly powder to it amd saute well. then on the flame and add vinegar to it.then add mango to it and cook it well.
then off the flame.
then place another pot and add sesame oil, mustard, drychilly and curry leaves to it and fry it. then add this after cooling to the mango. mix it well.
