Pininyahang Manok Sa Gata Recipe / (Pineapple Chicken in Coconut Milk)
Ingredients
* 1 1/2 kl. chicken, cut into serving pieces
* 1 (15oz) pineapple chunks (drain and reserve syrup)
* 2 red and green bell pepper, cut in cubes
* 2 cups coconut milk
* 3 tbsp. fish sauce
* 2-3 med. carrots, sliced diagonally
* 4 med potatoes, cut into cubes
* 1 large onion, chopped
* 2-3 tbsp garlic, chopped
* 4 tbsp. Ginger, cut into strips
* salt and pepper to taste
* Cooking oil
Directions:
In a large pan, Add cooking oil in medium heat. Sauté ginger, onion and garlic until soft and fragrant.
Add chicken and sear in batches until the outer parts turn light brown.
Add fish sauce, the reserved juice and coconut milk. Cover and simmer for 20-25 minutes or until tender.
Add potatoes, carrots and pineapple chunks. Simmer for at least 10 minutes until partially tender.
Add red bell pepper. Stir and simmer for a few minutes. Season with salt and pepper.
Remove cover and simmer for 10 minutes, stirring occasionally to avoid the coconut milk to curdle.
