“VERDENS BESTE KAKE” means World’s Best Cake in english. It is a Norwegian delicacy for cakes. I guess it is their traditional best cake. It is very popular to all Norwegian folks. I adapted the recipe from my late mother in law. It is mostly served in local parties at home.

VERDENS BESTE KAKE RECIPE
For the Cake
100 gms all purposes flour
1 tsp baking powder
2 taps vanilla sugar
100 gms butter (softened)
100 gms sugar
4 egg yolks
4 Tbsps milk
First step
Beat the butter and add sugar gradually.
Add the egg yolks and when it is all mixed add all the dry ingredients along with the milk.
Second step
Prepare the meringue mixture. Whisk the egg whites with the sugar (175 gms)
Put the meringue mixture over the cake mixture.
For garnishing
1/2 of almonds flaked
Sprinkle over the meringue tops before putting to the oven.
For the cream fillings
2 cups heavy cream or whipping cream
1 1/2 cups vanilla cream
Whisk altogether until it forms a stiff peaks.
Preheat oven to 175 degrees C. Cook for about 18 - 20 minutes or until the almonds are slightly brown.
Cool down the cake before cutting into half. Then add the cream fillings on top of the other half. Then put over the half of the cake.
