Chef Peppe Guida's Pasta and Peas
Ingredients:
3 fresh onion bulbs, chopped
1 lb fresh peas
Extra virgin olive oil
Salt
Pepper or hot pepper flakes
Fresh basil
Spaghetti, broken into small pieces
Directions:
1. Sauté the onions in extra virgin olive oil until golden. Add the basil and fresh peas. Cook for about 5 to 10 minutes.
2. Add hot boiling water to the pan, then add the pasta. Stir and continue adding water a ladle at a time, being careful not to make it too watery.
3. Remove from heat once the pasta is al dente.
4. Add fresh peas on top for a textural element.
5. Drizzle with extra virgin olive oil and garnish with fresh basil.
